Our favourite Summer Rosé - Babylonstoren

A few months ago we received the dream email - an email from Babylonstoren. We have been mildly obsessed with Babylonstoren for a few years now - a vineyard nestled in the in the base of the Franschhoek mountains in South Africa. Babylonstoren is farm that dates back to 1692, it has fruit and vegetable gardens of beauty and diversity, unique accommodation, fine food and wine, and a sense of wellbeing. It’s one of the most beautiful places that we have ever laid our eyes on. There are two restaurants that’s a  constant inspiration (their cookbook is wonderful - one of our bibles), everything is taken from the land and simply, yet perfectly put together to create a beautiful dish. 

 

We found out about the farm after tasting their wines that we came across in The Talbot in Mells, Somerset - a pub that does very good food. And we instantly fell in love. When Babylonstoren got in touch about collaborating on their new rosé we had to blink twice, could this be true?! We tasted their Mourvèdre Rosé and of course said yes. It instantly became our favourite rosé and we started to stock it in the deli at Wild by Tart, it will also soon appear on the menu for the restaurant when we open in September.  

 

Rosé is a versatile wine that is mostly associated with guzzling before a meal, however we often pair it with dishes, and sometimes we like to serve it throughout the whole affair. Here we have paired it with one of our favourite summer desserts and even used it to poach the apricots - Honey, vanilla and basil posset with lemon vebena and rosé poached apricots. It is super easy and is the perfect light summer pudding - you can also make it in advance to make your life easier if entertaining. Link to recipe here
