Fig and Port Sorbet
Serves 6
INGREDIENTS
14 figs, quartered
300ml water
1 tsp vanilla extract
100g caster sugar
juice of 1 large lemon
100ml LBV Port
couple of sprigs of fresh mint
INSTRUCTIONS
Place the figs in a pan with the
water and simmer for about 5 minutes, add the vanilla extract and sugar and
simmer for another 8 – 10 minutes till the mixture becomes almost jam like. Add
the port and keep on the heat for a minute or so. Poor into the blender, add
the lemon juice and whizz till smooth. Pour into the ice cream machine and
churn (according to the instructions) either serve or place in the freezer till
needed. Serve with a few mint leaves.
